A few weeks ago, I was contacted by RawSpiceBar to try out their monthly spice packets. I love to cook and so does my husband (well he grills and smokes meat and cheese) so I was excited to try out some new spice blends! The monthly spice subscription makes a great gift or is an inexpensive way to upgrade your cooking and try some new flavors. One of the spice blends we received for November was the Greek Salt Free Seasoning. This seasoning is packed with Greek oregano, lemon peel, thyme, freshly ground Tellicherry peppercorns and a very light touch of nutmeg and cinnamon and smells amazing! This light and tangy salt free seasoning works perfectly for a homemade gyro sauce, chicken dry rub, Greek shish kebabs, baked potato fries, lemon and olive oil dressing or in olive oil with grilled veggies. I decided to create a quick and easy Greek Chicken Sandwich with it that the whole family loved.
Greek Chicken Ciabatta Sandwiches with Tzatziki Sauce
Chicken:
4 boneless skinless chicken breasts
1T. greek seasoning
Directions: Place in slow cooker and cook on low for 8 hours. Take chicken out and shred. Return to slow cooker until ready to assemble sandwiches.
Tzatziki Sauce:
12oz plain Greek yogurt
2T. lemon juice
1 small cucumber, peeled, seeded, and diced
1t. dried dill
2T. minced garlic
salt and pepper to taste
Directions: Combine all ingredients in a food processor or blender. Process until well blended. Transfer sauce to a dish. Cover and refrigerate at least one hour prior to serving for best flavor.
To Assemble Sandwiches:
Ciabatta rolls
Tomatoes, sliced
Red onion, sliced
Spinach
Shredded chicken
Tzatziki sauce
Directions: Slice ciabatta rolls open lengthwise. Warm in oven or toast lightly if desired. Add chicken, tzatziki sauce, tomato, red onion, and spinach. Serve warm. Enjoy!
