I mentioned on my last Menu Planning post that Matt and the girls were headed out to Arizona while I had a different spring break and had to work. I was still able to make some nice meals while they were home and then try a few recipes when I was at home by myself for a week, too. Here are the recipes I tried out:
- Chili Lime Chickpea Wrap- I tried this while Matt and the kids were out in Arizona this past week. The dressing is amazing! I was worried it wasn’t going to be filling, but it really was.
- Korean BBQ Meatballs– Meatballs are always a hit with my family and these were no exception! Great flavors.
- Stuffed Sweet Potatoes– These are so easy. You can cook them in the slow cooker and add whatever you want on top. I did a taco filled one.
- No Bake Cannoli Cake– The girls made these and really liked them. I think the ganache was too runny though so if I make it again I would alter the recipe.
