- Paninis (I toss chicken breasts in the slow cooker with seasonings and cook on low all day then shred. Serve with fresh mozzarella, tomatoes, spinach, basil, whatever you want! Get naan, ciabatta bread or your desired bread. Cook on panini press, George Foreman grill, or on your stovetop.) Serve with fries or sweet potato fries.

We have had some busy weeks and weekends over the past 2 weeks and coming up. That means I’m sticking with tried and true recipes. Do you ever find that when you are first making a recipe, the prep time is always a bit longer than calculated? I certainly do. After making it a time or two, it becomes easier and faster to cook or bake. So whenever I am feeling our workload or activity load is a bit heavy, I always go back to recipes I’ve made before. Last week we had a couple of chili cook-offs which were really fun. I did not make chili, but brought desserts to both. The carmelitas I made won the bake-off which was really exciting! If you have never made them, I highly recommend them! Since they are quite rich, I do cut them very small.
