I’m almost done with my Christmas cookies! Just a couple more batches to make. After I’m done I will send the girls out with plates for the neighbors. It’s the least we can do since they will be selling their Girl Scout cookies to the neighborhood very soon. Haha!

- Easy Lasagna (I’m making a double batch to freeze one for later), with a salad and garlic bread
- Cajun Sweet Potato Chowder
- Skillet Apple Cider Chicken*
- Meatball Gyro Sandwich
- Rum balls– I actually make these with some amaretto moonshine we got and it gives them so much delicious flavor!

- Christmas Dinner- Filet mignon*, Garlic Parmesan Brussels Sprouts*, and mashed potatoes
- Orange Shrimp
- Potato and Sausage Chowder*
- Skillet Sausage Stuffing (I’m adding flavored sausages, cranberries, apples, and more to beef it up for a main dish)
- Lemon cookies

Last menu planning I mentioned I wanted to try a couple of new recipes to help ‘remake’ Thanksgiving leftovers. Here are my thoughts:
Easy Asparagus Chicken Soup – I make asparagus casserole instead of green bean casserole due to some family allergies. I remade it into soup and the family liked it. It was a nice way to switch it Stuffing waffles– I added extra onions and eggs to stuffing then made it into savory waffles. We topped with shredded cheese, gravy, and/or cranberry sauce. We all thought these were quite good. I liked the crunchy edges.
This go-round I am trying a couple of new recipes for Christmas dinner. Typically we don’t go so high end with filet mignon, but I let Claire choose the dinner since it is her birthday dinner. We had to laugh when that is what she chose! We also traditionally have soup on Christmas Eve after coming home from church service and I’m trying the Potato and Sausage Chowder.
