Over the past 2 weeks I tried quite a few new recipes. Most of these were due to a trial of the vegan meal prep box Purple Carrot. I don’t typically cook vegan, but I’m certainly open to it. Our favorite was a tofu recipe that is very similar to Sticky Lemon Tofu. The sticky sauce is delicious, but my family loved the crispy tofu. All you do is break the tofu in chunks after drying it, coat it in cornstarch, then fry it. Even Matt had really good things to say! I’m going to make it the same way when we have the Thai tacos for dinner. Here are a few other recipes we tried not from Purple Carrot:
- Cowboy Sliders– These were SO good and flavorful. They did take some extra prep though.
- Firecracker Meatballs– The girls absolutely loved these. I wish the sauce was thicker though. I might add a bit of cornstarch and cook the sauce next time.
- French Onion Pot Roast– This was so easy to make and tasted really good over mashed potatoes.
- Creamy Lime Coconut Salmon– The entire family liked this. I wish I would have made an extra piece or two. There was plenty of sauce to serve with some rice.
