The weather is FINALLY beginning to cool down again so I went back to look at some fall flavored recipes and good ole comfort food. I just love squash mac and cheese. It’s a bit more labor intensive so I normally make double the recipe and freeze the extra. That is really convenient when family comes over or I’m too tired to make dinner. The last 2 weeks I tried a couple of new recipes:
- Sugar Cookie Cheesecake Bars– I loved these! I had to make my sugar cookie dough from scratch since it wasn’t in stock at 2 stores I stopped in. You could easily sub in any cookie dough for a different flavor though. The entire house smelled good!
- Thai Tofu Tacos– These were better in concept. I don’t know if it was the brand tofu or the recipe, but there wasn’t enough flavor on the tofu. I added hoisin sauce and that helped a lot. I ended up eating the leftovers as a salad over the cabbage (I used a bag of coleslaw) instead of a taco.
One other recipe that isn’t new to me I wanted to mention. The Garlic Bread Chicken Pot Pie had a few comments. What I really like about it, is that it is easily personalized. I had leftover roasted eggplant, wilted spinach, and green onions I tossed in. Matt really liked it. I also saved the ends of my bread in the freezer and use those instead of french bread. It’s nice to have recipes that use what you have!
