- Southwestern Shrimp with Cowboy Caviar (so good as a salad!)
- Cheesy White Bean-Tomato Bake (add in Italian sausage, spinach, onion, extra tomato paste, and even finely chopped carrots), I serve with crusty bread and a salad.
- Sour Cream Chicken Enchilada Casserole

- Parmesan Ravioli and Veggies
- Slow Cooker Creamy Tomato Basil Chicken with Berry Caprese Salad
- Arby’s Beef and Cheddar Sandwiches (slow cooker)*
- Sausage wreath (based on this recipe), cook 1lb Italian sausage in skillet, mix in 1 pkg. thawed frozen chopped spinach, 8oz softened cream cheese. Arrange 2 tubes of crescent rolls on baking sheet in circle with points facing outwards (like a sun). Fill with sausage mixture and bring points over top of filling and tuck underneath for wreath shape. Bake at 375 for 10-20 minutes until golden brown.

I don’t think it is any surprise that my last 2 weeks of menu planning did not include any new recipes to try out. It’s been quite the busy past 2 weeks. After so much eating out, we were just happy to be eating vegetables, fruit, and homemade meals again!
The upcoming 2 weeks are sure to be fairly busy as well since we are all starting back at school. The girls just requested one new meal- Arby’s Beef and Cheddar Sandwiches. We had some on the drive back from Yellowstone and they loved them. I’m going to try my hand at making some in the slow cooker. They look really easy and I love making it at home because that means: LEFTOVERS!
