- Paninis (I toss chicken breasts in the slow cooker with seasonings and cook on low all day then shred. Serve with fresh mozzarella, tomatoes, spinach, basil, whatever you want! Get naan, ciabatta bread or your desired bread. Cook on panini press, George Foreman grill, or on your stovetop.) Serve with fries or sweet potato fries.

Over the last two weeks, I tried a few new recipes like Garlic Parmesan Chicken & Potatoes, Buffalo Chicken Chalupa, and Cottage Cheese Alfredo. Although these were all really good, the chalupa and alfredo were real hits! They are both protein packed recipes and absolutely delicious. In fact, the alfredo was so good, I made it again since we had more cottage cheese to use up. I did tweak it a bit to use some greek yogurt, less milk and no cornstarch. This made the recipe easier and faster to make. I do not think it affected the taste. For dessert we tried Cinnamon Roll Bars which really have a cinnamon roll flavor and are very tasty! Now I’m excited to try out the churro cheesecake bars this week!
