
Welcome to Menu Planning 3/24-4/6/24! Don’t forget I also I post weekly recipes through the link on my instagram profile.
None of these are new recipes. I needed to keep things somewhat simple for the next 2 weeks! We are headed out of town shortly so I wanted to put together a menu for when we come back so I have some things in the freezer or pantry. It’s nice to have a few things on hand so we don’t need to do a full-on grocery shopping run right away.

- Easter dinner- smoked ham, Orange Dreamsicle Salad, mashed potatoes, green beans, Banoffee Pie
- Taco Salad
- White Chicken Lasagna Soup
- Oreo Fluff
- 3/31-4/6
- Breakfast Pizza Casserole
- Chorizo and Shrimp Paella
- Apple Cheddar and Red Onion Panini (add in lunch meat or chicken for protein!)
- Dill Chicken & Everything Bagel Biscuit Hotdish*
- Sticky Rhubarb Pudding
Over the last 2 weeks, I tried 3 new recipes. Here are my thoughts on them:

- Ham Casserole- Claire was a HUGE fan of this one. I thought it was really good, but wish it wasn’t quite so liquidy. I would reduce the amount of milk in the sauce if I made it again. We loved the crunch on top with the crackers. I actually made this in 2 8×8 pans and froze one. It makes a lot!
- Beef and Guinness Stew- This was my first time cooking with parsnips! Matt loved this stew. The meat was so tender.
- Crispy Gnocchi with Ricotta– This was pretty good, but it didn’t WOW me. I liked the ricotta and texture of the gnocchi though.
