To me the holidays are always a time to spend with family having fun and eating delicious food! We are fortunate to have amazing cooks on both sides of the family who always make incredible dishes to pass. There is never enough room on my plate to sample all the tasty options there are. There are always the traditional favorites, but there are also new appetizers, main dishes, side dishes, and desserts to try. I am constantly asking for recipes afterwards from my relatives afterwards! Because we live a couple hours away, I try to think of a recipe that will travel well and heat up easily in the oven once we get there.
Pasta dishes are always a big hit in our household and easy to make so this year I’ve decided on a pasta dish to bring. The best part is it incorporates ingredients that are red and green so it looks festive and uses Louis Kemp® Crab Delights® Chunk Stylewhich will definitely be a crowd pleaser!
I love cooking with crab and my family loves it, too! It adds great flavor to many dishes and works well in appetizers or main dishes. Making this dish is quick and easy. With the red pepper, spinach, and asparagus it is quite festive this time of year, but would really be good year round!
To make this casserole you will need:
- 8oz package of Louis Kemp Crab Delights Flake Style or Chunk Style
- 10oz package frozen, chopped spinach
- 1 16oz jar Alfredo sauce
- 19oz package frozen cheese tortellini
- 1 red bell pepper, chopped
- 1t. dried basil
- 1t. minced onion
- 8oz mozzarella cheese, shredded
- 16oz package frozen, asparagus cuts
- 1/3c. parmesan cheese, shredded
To prepare it:
- Preheat the oven to 350. Grease a 9×13 baking dish.
- Prepare tortellini according to package directions. If there is a suggested range of time for boiling, boil it for the shortest amount suggested. Thaw spinach and squeeze out extra water.
- Combine Crab Delights, tortellini, spinach, Alfredo sauce, chopped red pepper, basil, minced onion, and half of mozzarella cheese in a large bowl. Transfer to baking dish.
- Top crab and tortellini mixture with frozen asparagus. Sprinkle remaining mozzarella and parmesan cheese over top. Bake for 30 minutes until cheese is melted and edges are golden brown. Enjoy!
