I know everyone is excited as fall approaches and chili and soups are on a lot of people’s minds for dinner, but I am a little sad. No more fresh corn on the cob. I absolutely love corn on the cob and look forward to it every spring waiting impatiently until I see it in the grocery stores. Something about it says ‘summer’ to me. We eat it at least once a week at our house. Last summer we tried mixing up some seasoned butter to go on it. I like salt and pepper, but this takes it over the top! It can be done completely to taste. So get creative with your seasonings and enjoy the last of the sweet corn until next year!
1. Get your butter (room temperature or the spreadable kind), garlic powder, parmesan, and parsley flakes. Or whatever seasonings you’d like.
2. Mix about 2T. butter with 1/2T. garlic powder, 1T. parmesan cheese, and about 1/2t. parsley flakes. This can be adjusted for taste. I know my husband tends to have a heavy hand with the garlic.
3. Spread on corn liberally. It makes enough for 3-4 people. Enjoy!
Seasoned Butter (for corn on the cob)
3-4 servings
Ingredients:
2T. butter, room temperature
1/2 T. garlic powder
1T. parmesan cheese
1/2t. parsley flakes
1. Mix ingredients together and spread on corn.
