This is a great, easy (disclaimer: almost all recipes I post are ‘easy.’ Work Bake smarter, not harder) recipe from my mom. I know I will enjoy making it with Claire when she is older. The best part is you use your microwave and make it in a paper bag!
1. You will need 16c. of popped popcorn. I used this trick to make mine and it worked really well! Put all your popcorn into a big paper bag.
2. Now it is time to make the caramel. Put 1/2c. butter or margarine, 1c. brown sugar, 1/2t. salt, and 1/4c. corn syrup in a microwave safe bowl. Cover it and put it in the microwave for 2 minutes.
3.Take it out of the microwave and stir. Place it back in the microwave for 3 minutes, stirring after each minute.
4. Add 1t. vanilla and 1/2t. baking soda and stir well. Your caramel will lighten in color.
5. Pour over your popcorn in the bag. Fold over the top of the bag and shake well.
5. Stuff it in the microwave and microwave for 1 minute. Take it out and shake. Do it again except for 30 seconds this time. And then one last time.

6. Dump out the caramel corn onto wax paper to let harden.
7. Now comes the fun part! Add whatever inclusions you want! I added crushed Heath, melted chocolate, and crushed pretzels. Stir it all together and enjoy! Store in an airtight container.
Paper Bag Caramel Corn
Ingredients:
16c. popped popcorn
1/2c. margarine
1/4c. corn syrup
1/2t. salt
1c. brown sugar
1t. vanilla
1/2t. baking soda
inclusions (if desired)
1. Put 16c. of popped popcorn into a large paper bag.
2. Put corn syrup, margarine, and brown sugar, and salt into a microwave safe bowl. Cover and microwave for 2 minutes. Remove, stir then microwave for another 3 minutes, stirring after each minute.
3. Add vanilla and baking soda and stir well. Pour over popcorn in bag. Fold over top of bag and shake well.
4. Microwave bag for 1 minute, remove, then shake well. Microwave bag again for 30 seconds, then shake. Microwave bag 30 more seconds and shake one last time.
5. Pour out popcorn onto wax paper to cool. Add your inclusions (if desired).
