I totally judge a book by its cover. I judge a pinterest recipe by its picture, too. I know, I am a horrible person, but if it doesn’t make my mouth water it doesn’t get repinned. So when I saw this recipe floating around pinterest a couple years ago, I didn’t pin it at first. I finally got over being judgy and looked at it and thought it might be something my husband would like. Who knew I would like it, too! The original recipe can be found here and I didn’t make many changes. We thought it was pretty darn good as is. Kind of made me think about what else I could be missing out on when pictures on pinterest don’t do the pin justice…
1. Although this is really easy to make, there are quite a few ingredients and quite a few steps. You will need a package of chicken flavored stuffing mix, 1 1/4c. water, 4 chicken breasts, 4c. chopped broccoli, 1c. shredded cheddar cheese, bacon (we used 8 slices, the original recipe called for 4, but a slice of bacon per packet was nowhere near enough), and 4T. ranch dressing.
2. Lay out 4 sheets of foil and spray them with nonstick spray. I find it helpful to make the packets like an assembly line.
3. Mix the stuffing mix and water in a small bowl. Wait a few minutes until the water is absorbed then divide the stuffing between the foil packets. Place a chicken breast on top of the stuffing pile.
4. Top with about 1c. broccoli (I just use 2-3 stalks of broccoli and don’t really measure). Then sprinkle with cheddar cheese and bacon.
5. Drizzle about 1T. of ranch dressing on top of it all.
6. Seal packets and pinch the sides together leaving some room at the top for circulation. Place on a cookie sheet.
7. Bake at 400F for 25-30 minutes. Once you remove the packets from the oven, cut a few holes in foil to allow steam to escape before you open them. Enjoy all the flavors!
Foil Chicken Packet
Ingredients:
1 pkg chicken flavored stuffing
1 1/4c. water
4 chicken breasts
4c. chopped broccoli
1c. shredded cheddar cheese
8 slices bacon, cooked and chopped
4T. ranch dressing
Directions:
1. Preheat oven to 400F. Lay out 4 sheets of foil and spray each with nonstick spray.
2. Mix water and stuffing packet. Let water soak into stuffing. Spoon evenly onto 4 sheets of foil. Top with a chicken breast.
3. Top each chicken breast with approximately 1c. broccoli, 1/4c. shredded cheddar cheese, and 2 slices of cooked and chopped bacon. Drizzle with 1T. of ranch dressing.
4. Pull up sides of foil and pinch/fold together to make packets. Make sure there is room in the packet for air and heat to circulate. Place on a baking sheet and cook for 25-30 minutes. Cut slits in packet once removed from oven to allow steam to escape. Enjoy!
